PROJECT DESCRIPTION FISCAL 1997-1998

Background Many people in Canada - estimated at 40% of the population - suffer to some degree from lactose intolerance. Others prefer to eat fat-free desserts. Dorgel believed that these markets would consume soy based ice cream if it were equivalent to dairy product ice cream.

Objective To develop soy based ice cream (Frozen Dessert) which is indistinguishable from ice cream make from dairy products as determined by standard taste testing.

Project Period The project commenced in July 1997, and is estimated to be complete by mid-1999. The Dorgel FYE is 31st October.

Advance Recent studies have confirmed that soybean is more than a high yielding source of premium protein. It also contains relatively high amounts of phytochemicals such as genistein, daidzein, and glycitein, all of which are being studied in connection with the fight against cancer, high cholesterol, high blood pressure, heart disease, menstrual and menopausal problems and bone loss due to osteoporosis. The advance which is sought is to develop a formula or formulae and manufacturing process by which to make soy base ice cream products which are indistinguishable from the equivalent products make from dairy products.

Uncertainty While previous work in this field has demonstrated the dufficulty of developing a formula which produces the required combination of texture, body structure, melting characteristics and freezing point it is believed that the major difficulty will be to achieve all of the above characteristics while completely masking the soy flavor, for the range of flavors in prospect. It is unkown whether it will be possible to completely mask the soy flavor and after-taste.

Postulation Dorgel's project team believed that they could develop the formula or formulae required to satisfy the project objective by experimental formulae development and that a combination of artifical flavors could be developed which would mask the soy taste and after-taste.

Project Activities In fiscal 1997, experimental formulae development was commenced and about fifty possible formulae were evaluated before 31st October, 1997. Work continues into fiscal 1998.

In fiscal 1998 more than 120 experimental prototype formulae were tested and at the end of the period the project team had developed a formula which produced soy base ice-cream which satisfied all the tests for texture, body structure, melting characteristics, and freezing point. The problem of eliminating the soy flavor and after-taste by means of specific profile artifical flavors is scheduled to be carried out in fiscal 1999.

Interpretation of Results With the exception of eliminating the soy flavor (not an easy task) the project team has developed the formulae to satisfy the project objective. The team believes that it will also be possible to satisfy the flavor requirement but that it may not be possible before mid-1999.

Project Status The project was ongoing as at 31st October 1998 and is scheduled to be completed by mid-1999.
